My new favorite meal + a personal side to my NY resolution!

With a new year comes new resolutions that we try hard on for the first month and then slowly fall of the wagon…Not this year! New Year, Improved me I am saying!

My whole life I have struggled with weight, gaining and losing and gaining and losing. I experienced many different struggles along the way as well. When I was a sophomore in high school I was diagnosed with Polycystic Ovarian Syndrome. This rocked my world and not the good kind. While it gave me many answers to why I was having certain symptoms, it also came with struggles and many doctor visits/medicine trials to come. Hearing that I possibly may not be able to conceive my own kids hurt, let me tell ya. But, God has a plan and that I know!

While I still struggle with weight a lot I try my best to eat clean and workout when I can.  Having polycystic means I have to work twice as hard to loose weight and keep it off. I take different medicine and even give myself a weekly shot, Ouch! This is where my resolution kicks in, I may give in to Chick-fil-a here and there but I am trying my best to meal prep. When you take the time to meal prep things, you are more likely to eat healthy because it is already prepared! I ate this ‘Yum Yum bowl’ for dinner and lunch last week. It is that good! Super easy and a good clean eat!

YUM YUM BOWL RECIPIE: (serves 2-4) 

1 pound of ground turkey

1 1/2 cup of frozen spinach

1/2 cup diced yellow onion

1 sliced avocado

2 baked sweet potatoes

1 cup of quinoa


1/3 cup creamy peanut butter

1/4 cup chunky salsa

1/3 cup soy sauce

2 teaspoons garlic powder

  • Mix together until a sauce like consistency forms. You may need to alter the amounts of each for your taste but this worked for me. It makes thai-like sauce.


  1. If you haven’t pre cooked your sweet potatoes, cook them now in the oven on 400 for about 35 minutes.
  2. Start cooking the quinoa- 2 parts water per 1 part quinoa, bring to a boil and then let simmer for 15 minutes.
  3. While the quinoa cooks, saute the ground turkey meat while stirring in a pan until it is cooked through. About 5 minutes.
  4. Once the meat is cooked, remove it from the pan. Add a drop of olive oil. Put in the spinach and onion. Saute until soft.
  5. Fill bowl with 1/2 cup of cooked quinoa. Then place cut pieces of sweet potato, ground turkey and the spinach on top of the quinoa.
  6. Top the food with some avocado slices and some sauce. Enjoy!
